Transcontinental Coffee Cake

We have always been an open stockings and gifts on Christmas kind of family.  After exploring stockings, my Mom would serve her famous Transcontinental Coffee Cake.  I am attaching the recipe here.  No frills, just a cake from the 70s.  Today, my Mom at 91 years old makes a cake for every family to enjoy on Christmas morning.  These days, Mom and Dad come to our house for brunch which we enjoy. 

Ingredients:

  • 1 package yellow cake mix

  • 1 package vanilla instant pudding (many of the cakes now have this incorporated)

  • ½ C vegetable oil

  • 4 eggs

  • 1 C sour cream

  • Mix all ingredients and beat for 10 minutes on low speed

  • Topping:

  • 1 C chopped nuts-Mom uses pecans

  • ¾ C sugar

  • 2 T cinnamon

Directions:

  1. Pour ½ batter into creased tube pan

  2. Sprinkle 1/3 of the topping and mix with drawing a knife thru to marble the batter

  3. Pour in another third of batter and marble

  4. Add final batter and sprinkle the rest of the topping on top of the cake

  5. Bake for 1 hour at 350 degrees
